Pickle is served as side dish in many cuisines and is done by roasting spices in oil and then fermented with salt for long time. Traditionally unrefined and cold pressed oils were used in pickle. Nowadays, packaged vegetable pickles are made with refined oils.
Refined or even heated unrefined oil cause heart disease, and fermentation causes gas. When you are on a completely natural foods, you can observe this very clearly. Fermented food causes bloating, discomfort, gas, disturbed sleep, tired feeling and puffy eyes and face when you wake up the next morning. Fermented food is tamasic in nature. It is not fresh, it is old food. Excess salt causes hypertension too. When you eliminate oil, you don’t need as much salt in the dish!
