Kadubu or Patholi is a Konkan delicacy. Rice dumplings stuffed with coconut jaggery mix and steamed in aromatic turmeric leaves. Ugadi at its best! Flavoured, fragrant dumplings! Yum!
Kadubu is also called haldi panna (turmeric leaves) patholi (dumpling). A special dish for ganesh chaturti, ugadi and other festivals, the entire house is filled with the beautiful aroma of turmeric leaves when kadubu is being freshly steamed.
Patholi has an outer layer of rice batter and inner stuffing prepared with coconut and jaggery. This recipe is made with pulses instead of coconut. Cooking tree nuts reduces their antioxidant content. However, it doesn’t render nuts harmful. To get the full benefit of eating tree nuts, we can use pulses in the cooking and serve with grated coconut or coconut milk.
